Elote Dip Recipe (Mexican Street Corn)

OH MY GOODNESS YOU GUYS.

I saved this recipe on Pinterest because I really, REALLY want to host a dip party. But when a friend decided to host a Nacho Birthday Party, I thought making this dip would be a fantastic life choice.

Spoiler alert: it was.

This dip is SO yummy. And it pairs perfectly with nachos. Or corn chips. Or as a meal on its own (speaking from experience). I think it would be the perfect addition to any holiday party, just sayin’!

And while you could follow the recipe above, if you know anything about me, you know that I don’t really follow recipes. Instead, I follow the tried-and-true method of *vibes*… so if you want to recreate the mid-photographed dip in the picture above, here’s the scoop:

 Elote Dip Recipe

Serves 4 | Preparation Time: 15 minutes | Cooking Time: 7 minutes

Ingredients:

  • 2 cups canned corn (one large can)

  • 1/4 cup mayonnaise

  • 1/2 cup sour cream

  • 1 jalapeno, diced

  • 2 cloves garlic, crushed

  • 1/4 cup cilantro, finely chopped

  • 1 lemon, juiced

  • Elote seasoning, measured from the heart or ~2 Tbsp (we used the Costco one, but it’s essentially chili powder, cumin, lime zest, and parmesan)

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1/2 cup parmesan cheese, grated

  • 1 Tbsp butter

Directions:

1. Melt butter in a large pan. Once fully melted, add garlic and jalapeno and sauté for about a minute.

1 Tbsp butter, 2 cloves crushed garlic, 1 diced jalapeno.

2. Add corn to pan. Stir well. Cook for about 5-6 minutes.

2 cups of corn.

3. Remove pan from heat. If you have space, you can mix the rest of the ingredients in the pan, or transfer the corn into a bowl. Add in mayo, sour cream, cilantro, spices, lemon juice, and cheese. Stir until well combined.

1/4 cup mayonnaise, 1/2 cup sour cream, 1/4 cup cilantro, 2ish Tbsp Elote seasoning, 1 tsp chili powder, 1 tsp cumin, 1/2 cup parmesan cheese.

4. Stir well and garnish with a sprinkling of chili powder and grated parmesan cheese. Serve with chips or nachos and enjoy!

You can store this dip in the fridge for up to 5 days (though I doubt it will last that long).
